As you may already know, I live in a big ol' house with lots of my friends. Lately we have been cooking a lot together and are constantly looking for recipes to feed a crowd. Last week my roommate of 4 years, Briana and I decided to cook some hearty dishes. Briana came up with this delicious, spicy and hearty chowder. This stick to your bones stew is vegan (without yogurt garnish) and satisfies all cravings for flavorful and nummy goodness. Stay tuned for my Root Vegetable Gratinée!
Briana's Chipotle Sweet Potato Chowda
3 large sweet potatoes, roughly chopped
3 large parsnips, roughly chopped
3 large carrots, roughly chopped
1/4 cup chipote peppers in adobo sauce, sliced and in sauce
3 cloves garlic
2 cup frozen corn, fire roasted if possible
2 cups vegetable stock
1 red onion diced
1 tablespoon chili powder
1 tsp sea salt
1 tsbp. pepper flakes
1/2 tablespoon ground cinnamon
diced pears(we used yah pears) and dollop plain yogurt for garnish
In a large pot, simmer vegetable broth with sweet potatoes and red onion for about 25 minutes with lid on. When sweet potatoes are tender add the remaining ingredients and simmer on low for 15-20 minutes stirring often, until soft. Enjoy!
