Katie Briggsis a chef and activist based in Philadelphia, Pennsylvania. A 2016 James Beard Women in Culinary Leadership recipient, Katie has traveled far and wide offering up her culinary talents. Her resume boasts whole-animal butchering, hosting culinary events and pop-ups from California to Maine, (as well as abroad in France and Germany) and several years touring with the acclaimed culinary circus Outstanding in the Field to nearly all 50 states. The first annual full moon feast @greatsongfarm nearly made my heart explode. I got to spend the week on the farm preparing for the feast and got to work with so many kind souls to create a spectacular dinner. Emily and Maggie grow some of the most stunning produce I have gotten to work with. This is grueling work and Mother Nature likes to push us as far as she can but it all came together perfectly in the end. Working with my farm community from the west coast made me realize how far we have all come as radical food folks. My values were shaped by the biodynamic farm community of the central coast of California. I still call on them in my cooking, from steeping herbs, utilizing flowers, following moon cycles and the celebration of harvest. Last night I got to hang with my old crew @out_inthefield at one of my favorite farms on the east coast @thehickories. I was in the kitchen with @wood_fire_food and got to help put out an epic meal for 200. Outstanding is such a huge part of my culinary journey. It is because of them I was exposed to countless farmers, chefs and hospitality professionals across the country. It all would have never happened if I didn’t hitch-hike to my first dinner in Santa Cruz back in 2013. Today I can look back and remember all the good memories of food, wine and geological wonders, but this sort of event production is brutally hard work that takes countless hands. Each year I come back there are new streamlined systems that make it all come together so effortlessly, all 20 years in the making. I was on SNAP in 2017 when I took a pay-cut to do an apprenticeship. Being able to buy healthy groceries at the farmers market and co-op was such a relief to my finances. Too often we ignore how crucial safety nets like SNAP are for our community. It is time that we see food access as a vital part of a healthy community. We have a long way to go before we can heal this flawed system but I am honored to be able to give back to the program that helped me get to where I am today. Thank you @lunariagardens for making me feel like a Marigold Queen for my Solar return// Last night I witnessed police militarize in my neighborhood in West Philadelphia. Hundreds of officers surrounded our park and a helicopter was whirling around the sky. Even though I wasn’t feeling well I wanted to stand in solidarity with my community and take up space with my whiteness. I wandered around asking folks who were in the park what was going on and asked the cops what was happening. An officer turned away from me and muttered under his breath, “I know what your doing”. I paused, amazed at how he could interpret what I was doing. I was a person in the community trying to understand why the police were terrorizing young black people in my neighborhood. I was watching them do it. We stood on the sidewalk to make sure it didn’t escalate any further. At one point a car backfired and I thought about how gunfire could erupt at any moment and that I could be killed, something black people in my community reckon with everyday. It was not necessary for the police to display such excessive force. This is an old story that we are only now getting to see thanks to technology. We need to demilitarize the police force and reckon with its white supremacist roots. #fightthepower #fuckwhitesupremacy #policethepolice
Pictures of a privileged life. Thank you to everyone for all the birthday wishes, I am happy to have made it to 29. This birthday is particularly significant to me as I almost didn’t make it here. With the support of my family, friends and therapist I was able to overcome some of the darkest moments of my life. My reality has shifted a lot thru out my 20s and now I find myself at a point where I know who I am, I know the changes I want to see in my industry and community and I know how I want to get there. Celebrating my life this last week has reminded me that my world is one that has been shaped by the endless privileges I was born into. The crisis this country is in is an unbearable truth we must acknowledge and fight. It is time to abolish ICE and dismantle the white supremacist ideology this country was founded on and continues to perpetuate. It is important to take time to celebrate but it is also important to fight against injustice. I am excited and terrified for the work that is ahead of me but anything worth doing is.
